Ingredients
  

For the Filling

  • 2 cups Fresh Spinach can substitute with ½ cup frozen spinach, thawed and drained
  • 1 cup Canned Artichoke Hearts drained and chopped
  • 8 oz Cream Cheese softened
  • ¼ cup Sour Cream
  • ¼ cup Mayonnaise
  • ½ cup Parmesan Cheese grated
  • 1 cup Mozzarella Cheese shredded
  • 2 cloves Garlic minced
  • Salt and Pepper to taste
  • Red Pepper Flakes optional

For the Pastry

  • 1 sheet Puff Pastry thawed
  • 1 large Egg for egg wash

For Garnish

  • 2 tablespoons Fresh Parsley optional

How to Make Rich Spinach and Artichoke Puff Pastry Bites

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Sauté fresh spinach over medium heat until wilted, about 2-3 minutes.
  • Mix in a bowl the sautéed spinach, chopped artichoke hearts, cream cheese, sour cream, mayonnaise, Parmesan, mozzarella, garlic, salt, pepper, and red pepper flakes. Stir until all ingredients are well combined and creamy.
  • Roll out the puff pastry on a lightly floured surface, then cut it into 3x3-inch squares.
  • Arrange the pastry squares on the lined baking sheet with enough space to puff up.
  • Spoon 1-2 tablespoons of the filling onto the center of each pastry square.
  • Fold the pastry corners over the filling if you prefer pockets.
  • Whisk the egg with a splash of water to create an egg wash, then brush the edges and tops of the pastry squares.
  • Bake for 15-20 minutes or until golden brown and puffed.
  • Remove from the oven and let cool briefly; garnish with fresh parsley if desired.
  • Serve warm and watch them disappear!

Notes

These bites are best enjoyed fresh but can be stored in the fridge for up to 3 days or frozen for up to 2 months.
