Ingredients
  

For the Stir Fry

  • 2 tablespoons Vegetable Oil can substitute with avocado or grapeseed oil
  • 1 cup Red Bell Pepper any bell pepper works
  • 1 cup Yellow Bell Pepper can use orange or green peppers
  • 1 cup Carrot zucchini is a great swap
  • 1 cup Broccoli Florets bok choy or green beans can be alternatives
  • 1 cup Zucchini replace with eggplant if desired
  • 1 cup Sugar Snap Peas/Snow Peas green beans can be swapped in
  • 4 stalks Green Onions scallions are a great alternative
  • 2 cloves Garlic fresh is best
  • 1 tablespoon Fresh Ginger or ground ginger if unavailable
  • 3 tablespoons Soy Sauce/Tamari coconut aminos are a soy-free option
  • 1 tablespoon Hoisin Sauce optional
  • 1 tablespoon Sesame Oil can replace with peanut oil
  • 2 tablespoons Cornstarch Slurry arrowroot powder can be used as a substitute

For Serving

  • 2 cups Steamed Rice or Noodles brown rice or quinoa for a healthier twist
  • 2 tablespoons Sesame Seeds for added texture

Instructions

  • Start by washing and slicing all your vegetables into uniform sizes.
  • In a medium bowl, whisk together the soy sauce, hoisin sauce, sesame oil, and cornstarch slurry.
  • Preheat your wok or large skillet over high heat until hot and add vegetable oil.
  • Add minced garlic and grated ginger to the hot oil, stirring for about 30 seconds.
  • Toss in the carrots and broccoli first, stir-frying for 2 minutes.
  • Incorporate the remaining sliced vegetables and stir-fry for 3–5 minutes.
  • Pour the prepared sauce over the vegetables, tossing everything to coat well.
  • Sprinkle with green onions and sesame seeds, then serve hot over rice or noodles.

Notes

For an extra kick, serve with sriracha.
