  • Prepare the Cranberry Glaze: In a saucepan, combine cranberries, orange juice, sugar, apple cider vinegar, and cinnamon. Simmer over medium heat, stirring occasionally, until the cranberries burst and the glaze thickens, about 10-15 minutes.
  • Preheat the Oven: Adjust your oven temperature to 400°F (200°C) to ensure it's ready for roasting the pork.
  • Season the Pork: Pat the pork tenderloin dry with paper towels. Generously season all sides with salt, pepper, garlic powder, onion powder, and dried thyme.
  • Sear the Pork: In an oven-safe skillet, warm olive oil over medium-high heat. Sear the pork for 3-4 minutes on each side until it develops a beautiful golden-brown crust.
  • Apply Glaze: Brush half of the prepared cranberry glaze over the top of the pork.
  • Roast the Pork: Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Brush with additional glaze halfway through cooking.
  • Rest and Serve: Once cooked, remove the pork from the oven and let it rest for 5-10 minutes. Slice into medallions and serve with the remaining cranberry glaze drizzled over the top.
