For Assembly

  • In a bowl, combine olive oil, minced garlic, cumin, chili powder, salt, and pepper. Rub the mixture on the flank steak and let it marinate for at least 30 minutes.
  • Boil water in a medium saucepan, add rice, cover, and simmer for 18-20 minutes until the water is absorbed.
  • Preheat your grill or grill pan to medium-high. Grill the marinated steak for 4-5 minutes on each side until it reaches your desired doneness.
  • In a large bowl, mix warm rice, black beans, corn, diced tomatoes, red onion, cilantro, and lime juice. Toss everything together gently.
  • Thinly slice the rested steak against the grain and layer the slices atop the rice mixture in serving bowls.
  • Top your bowls with creamy avocado, a sprinkle of cheese, and a dollop of sour cream or salsa.

Notes
