For the Mashed Potatoes

  • 1 teaspoon Garlic Powder Optional based on taste.

Cooking Steps

  • Heat olive oil in a skillet over medium heat.
  • Season both sides of the chicken cutlets with Italian seasoning, salt, and pepper.
  • Cook the seasoned chicken in the skillet for 5-7 minutes on each side, until golden brown.
  • Remove the chicken from skillet and set aside.
  • Melt butter in the same skillet, then sauté minced garlic until fragrant.
  • Stir in cream of chicken soup, milk, ranch seasoning, onion powder, and heat through.
  • Return cooked chicken to skillet and simmer for 10 minutes.
  • Boil chopped russet potatoes in salted water for 15-20 minutes until fork-tender, then drain.
  • Mash the potatoes while adding half-and-half, butter, shredded cheese, and garlic powder.
  • Serve the chicken with gravy over a generous serving of cheesy mashed potatoes.

Notes
