Cooking Steps

  • Preheat a large skillet over medium heat.
  • Generously season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Sear each piece for 3–4 minutes per side until golden brown, then remove from the skillet.
  • In the same skillet, toast the uncooked rice for 1–2 minutes, stirring often.
  • Pour in the chicken broth, mix in the BBQ sauce and honey, and stir until well combined.
  • Return the seared chicken to the pan, gently nesting it into the rice mixture.
  • Increase the heat to a gentle boil, then reduce to low, cover, and cook for 15 minutes.
  • Sprinkle the mixed vegetables on top, cover, and cook for an additional 5 minutes.
  • Let it stand for 5 minutes off the heat, fluff the rice gently with a fork, and garnish.

Notes

Optional: Drizzle extra BBQ sauce over the top for more flavor.
