Ingredients
  

For the Chicken

  • 1 pound Boneless Skinless Chicken Breasts or chicken thighs for juicier bites

For the Sauce

  • 2 tablespoons Avocado Oil or olive/coconut oil
  • 1/3 cup Coconut Aminos or low sodium soy sauce
  • 2 tablespoons Honey or maple syrup for vegan option
  • 1 tablespoon Toasted Sesame Oil do not use regular sesame oil
  • 1 teaspoon Ground Ginger or fresh grated ginger
  • 2 cloves Garlic Cloves minced
  • 2 tablespoons Rice Vinegar can be omitted or replaced
  • to taste Black Pepper customize amount
  • 1 tablespoon Lime Zest
  • 1 tablespoon Lime Juice

For the Vegetables

  • 2 cups Green Beans or your favorite veggies

For Serving

  • 2 cups Cooked White Rice or cauliflower rice
  • 2 tablespoons Sesame Seeds for garnish

Instructions
 

Preparation

  • Cut the boneless skinless chicken breasts into 1-inch cubes.
  • Cook the rice and green beans according to package directions.

Cooking

  • Heat avocado oil in a large pan over medium-high heat.
  • Add the chicken cubes and sauté for 10-12 minutes until browned and cooked through.
  • While the chicken is cooking, whisk together the sauce ingredients in a bowl.
  • Once the chicken is cooked, remove it from the pan and set aside.
  • Pour the sauce mixture into the hot pan, cooking until it bubbles and thickens (about 3-5 minutes).
  • Return the cooked chicken to the pan and toss to coat in the thickened sauce.
  • Plate the Healthy Sesame Chicken over the cooked rice and green beans. Sprinkle with sesame seeds.

Notes

Optional: Garnish with fresh herbs or sliced green onions for an extra pop of freshness.
