Ingredients
  

For the Marinade

  • 1/4 cup Olive oil Use extra virgin for the best taste
  • 3 cloves Garlic Adjust to taste
  • 2 tablespoons Lemon juice Fresh-squeezed offers the best zing
  • 1 tablespoon Oregano Dried or fresh works well

For the Chicken

  • 1 pound Chicken breasts Pound to about 1/2 inch thick

For the Base

  • 2 cups Rice or quinoa Can swap for cauliflower rice for a low-carb option

For the Fresh Veggies

  • 1 cup Cucumbers Opt for seedless varieties
  • 1 cup Tomatoes Cherry tomatoes can be halved
  • 1 cup Bell peppers Choose from red, yellow, or green

For the Tzatziki Sauce

  • 1 cup Yogurt Use Greek yogurt for creaminess
  • 1 clove Garlic Adjust to taste
  • 1/2 cup Cucumber Finely grated, drain excess water
  • 1 tablespoon Dill Fresh dill provides the best flavor
  • 1 tablespoon Lemon juice Again, fresh-squeezed works best

Instructions
 

Marination and Preparation

  • In a medium bowl, whisk together olive oil, garlic, lemon juice, and oregano. Pound chicken breasts to about 1/2 inch thick, then add to the marinade. Let it soak for at least 30 minutes.
  • In another bowl, combine yogurt, grated cucumber, garlic, dill, and lemon juice. Mix until smooth and creamy, and set aside.

Cooking

  • Prepare your choice of rice or quinoa according to package instructions.
  • Air fry chicken at 380°F for 7 minutes per side, or sauté in a skillet over medium-low heat until cooked through.

Assembling the Bowls

  • In bowls, layer cooked rice or quinoa, chopped cucumbers, tomatoes, and bell peppers. Top with sliced chicken and tzatziki.

Notes

Garnish with fresh dill or feta cheese if desired. For maximum flavor, marinate chicken longer and do not rush cooking to achieve perfect results.
