Ingredients
  

For the Marinade

  • 1/4 cup Unsalted Butter softened
  • 3 tablespoons Miso Paste white or yellow
  • 2 tablespoons Gochujang or sriracha
  • 2 tablespoons Honey or maple syrup as vegan substitute
  • 4 cloves Garlic minced
  • 1 tablespoon Fresh Ginger minced
  • 1 tablespoon Soy Sauce or tamari for gluten-free
  • 1 teaspoon Sesame Oil or avocado oil
  • Salt and Pepper to taste

For Roasting and Serving

  • 1 whole Chicken about 4-5 lbs
  • Fresh Herbs for garnish
  • Lemon Wedges for serving

Instructions
 

Preparation

  • In a mixing bowl, combine the softened butter, miso paste, gochujang, honey, minced garlic, fresh ginger, soy sauce, sesame oil, salt, and pepper. Stir until well blended.
  • Gently loosen the skin of the chicken by sliding your fingers underneath. Generously rub the marinade under the skin and all over the outside, ensuring every inch is covered.
  • Place the marinated chicken in a covered container and refrigerate for at least 1 hour, preferably overnight.
  • Preheat your oven to 425°F (220°C).
  • Remove the chicken from the refrigerator and let it rest at room temperature for about 15 minutes.
  • Place the chicken in a roasting pan and put it in the oven. Roast for approximately 1 hour, basting halfway through with the pan juices.
  • Use a meat thermometer to ensure your chicken is fully cooked; it should read 165°F (75°C).
  • After roasting, let the chicken rest for 10-15 minutes.
  • Slice the chicken, then serve it garnished with fresh herbs and lemon wedges.

Notes

For maximum flavor, marinate the chicken overnight and baste halfway through roasting. Adjust gochujang or honey to taste.
