Cream Cheese Glaze

  • 4 ounces Cream Cheese use plant-based cream cheese for a vegan option
  • 1 cup Powdered Sugar adjust sweetness to preference
  • 2 tablespoons Milk use dairy-free milk if necessary
  • 1 teaspoon Vanilla Extract optional but recommended

Pancake Preparation

  • In a large bowl, whisk together all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until well blended. In a separate bowl, combine buttermilk, large eggs, melted butter, vanilla extract, and red food coloring. Gradually add the wet mixture to dry ingredients, stirring gently until just combined.
  • Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or a little butter. Pour about ¼ cup of batter for each pancake onto the skillet, cooking until bubbles form on the surface (about 2-3 minutes). Carefully flip each pancake and cook for an additional 1-2 minutes until fully cooked and golden brown.
  • In a mixing bowl, beat the cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy. If the glaze is too thick, add a little more milk until you reach your desired consistency.

Notes

For a decadent finish, drizzle with extra glaze and sprinkle with chocolate shavings. Avoid overmixing for fluffier pancakes.
