Ingredients
  

For the Pie Crust

  • 1 1/2 cups all-purpose flour Use gluten-free flour for a gluten-free version.
  • 1/2 teaspoon salt Enhances flavor.
  • 1/2 cup unsalted butter, chilled and diced Replace with vegan butter for a dairy-free option.
  • 1/4 cup ice water

For the Filling

  • 1 cup corn syrup Can use maple syrup for different flavor.
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup bourbon Can omit for non-alcoholic version.
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups pecan halves

Instructions
 

Making the Pie

  • In a mixing bowl, combine 1 1/2 cups of all-purpose flour and 1/2 teaspoon of salt.
  • Add 1/2 cup of chilled and diced unsalted butter and blend until the mixture resembles coarse crumbs.
  • Gradually mix in 1/4 cup of ice water until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Roll out the chilled dough to fit a 9-inch pie pan, about 1/8 inch thick.
  • Place the rolled dough into the pie pan, trimming any excess, and prick the bottom with a fork.
  • In a large bowl, whisk together 1 cup of corn syrup, 1 cup of packed brown sugar, 4 large eggs, 1/4 cup of melted unsalted butter, 1 teaspoon of vanilla extract, and 1/4 cup of bourbon until smooth.
  • Stir in 1 cup of semi-sweet chocolate chips and 1 1/2 cups of pecan halves.
  • Pour the filling into the prepared crust, spreading it out evenly.
  • Bake for 50-60 minutes, covering the edges with foil if they brown too quickly.
  • Allow the pie to cool on a wire rack for at least 2 hours before serving.

Notes

For an extra touch, serve with whipped cream or vanilla ice cream.
