For the Crust

  • 1 cup All-Purpose Flour Use fresh for the best results.

  • 1/2 cup Unsalted Butter Ensure it's at room temperature for easier blending.

For the Filling

  • 1 cup Toasted Hazelnuts You can use pre-toasted or finely chop for texture.
  • 8 ounces Dark Chocolate (70% cocoa or higher) Choose high-quality for the best ganache experience.
  • 1 cup Heavy Cream Creates a luscious ganache.
  • 3 large Eggs Use large eggs for consistency.

Preparation

  • Preheat the oven to 350°F (175°C). In a large bowl, mix together the flour, cocoa powder, and sugar. Cut in the unsalted butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom and up the sides of a tart pan, then bake for 15 minutes until set.
  • While the crust is cooling, spread the hazelnuts evenly on a baking sheet. Toast them in the oven for about 10 minutes until golden brown but not burned, stirring halfway through.
  • In a small saucepan over low heat, combine the heavy cream and chopped dark chocolate. Stir until melted and smooth. Allow the mixture to cool slightly, then whisk in the eggs until fully combined.
  • Sprinkle the toasted hazelnuts evenly over the cooled tart shell. Pour the ganache mixture over the nuts.
  • Bake for an additional 20-25 minutes. The filling should be set yet slightly wobbly in the center.
  • Let the tart cool completely at room temperature. Refrigerate for at least two hours or overnight.
  • Slice and serve chilled or at room temperature, optionally topped with whipped cream or fresh berries.

Notes

Chilling the tart enhances the flavors significantly. Optionally serve with a sprinkle of sea salt for added flavor.
