Ingredients
  

For the Casserole

  • 4 cups Zucchini, sliced
  • 3 cups Cooked Chicken, shredded Rotisserie chicken works well.
  • 1 cup Shredded Cheddar Cheese Can use a cheese blend.
  • 1 can Cream of Chicken Soup Use homemade for a healthier option.
  • 1 cup Sour Cream Greek yogurt can be used as a substitute.
  • 0.5 cup Milk Plant-based milk works well.
  • 1 medium Onion, finely chopped
  • 1 teaspoon Garlic Powder Fresh garlic can be substituted.
  • 1 teaspoon Dried Oregano Use fresh for bolder flavor.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 1 teaspoon Paprika Optional.

For the Topping

  • 1 cup Breadcrumbs Panko is preferred.
  • 0.5 cup Grated Parmesan Cheese Nutritional yeast can be used for a dairy-free option.
  • 0.25 cup Butter or Olive Oil, melted Use olive oil for a vegan option.
  • 2 tablespoons Dried Parsley Optional for garnish.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish.
  • Sauté sliced zucchini in a skillet with olive oil for 5-7 minutes until slightly tender. Season with salt and pepper.
  • Drain excess moisture from zucchini if necessary; set aside.
  • Combine the cooked chicken, sautéed zucchini, cheddar cheese, cream of chicken soup, sour cream, milk, onion, garlic powder, oregano, salt, pepper, and paprika in a mixing bowl. Stir well.
  • Spread the mixture evenly in the greased baking dish.
  • Mix breadcrumbs, grated Parmesan cheese, melted butter or olive oil, and parsley in a small bowl.
  • Sprinkle the breadcrumb mixture evenly over the casserole.
  • Bake for 30-35 minutes or until golden brown and bubbly.
  • Cool for a few minutes before serving.
  • Serve warm.

Notes

Optional: Garnish with fresh parsley for extra color and flavor.
