  • 2 tablespoons Extra Virgin Olive Oil or any neutral oil
  • 1 medium Onion yellow or red
  • 3 cloves Garlic minced
  • 1 cup Vegetable Broth can be swapped with water or chicken broth

For the Vegetables

  • 1 cup Bell Peppers finely chopped
  • 1 cup Frozen Green Peas or fresh if in season

For the Crunch

  • 1/4 cup Pine Nuts or toasted almonds/walnuts

How to Make Cauliflower Rice Pilaf

  • Begin by heating a splash of extra virgin olive oil in a large skillet over medium heat. Add diced onion and cook for about 5 minutes, or until they become translucent and fragrant.
  • Toss in freshly minced garlic and sauté for an additional minute, letting it infuse the oil with its aromatic goodness.
  • Stir in finely chopped bell peppers and sauté for about 3 minutes until they soften and brighten up the mixture.
  • Add the cauliflower rice along with vegetable broth. Mix everything well and let it simmer gently for about 5 minutes, until heated through and tender.
  • Fold in the frozen green peas during the last minute of cooking. This step helps retain their vibrant color and crisp texture.
  • In a separate dry pan, lightly toast the pine nuts over medium heat for about 2 minutes until they turn golden brown.
  • Serve your warm Cauliflower Rice Pilaf in a bowl, and generously sprinkle the golden pine nuts on top for that perfect crunch.

Notes

For added flavor, drizzle a bit of lemon juice before serving. The pilaf is make-ahead friendly and reheats beautifully.
