Ingredients
  

For the Rice

  • 3 cups Cooked Rice Preferably day-old rice

For the Protein

  • 1 pound Chicken Breast Diced boneless, skinless

For the Veggies

  • 1 cup Carrots Diced small
  • 1 cup Green Peas

For Flavors

  • 3 cloves Garlic Minced
  • 3 stalks Green Onions Used as garnish
  • 1 tablespoon Soy Sauce Use tamari for gluten-free

For the Sauce

  • 1/2 cup Bang Bang Sauce Made from mayonnaise, Sriracha, sweet chili sauce, and rice vinegar

For Cooking

  • 2 tablespoons Oil Neutral oils like canola or vegetable

How to Make Bang Bang Fried Rice

  • In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to create your bang bang sauce.
  • Heat oil in a large skillet or wok over medium-high heat, add diced chicken, and cook for 5-6 minutes until browned and cooked through. Set aside to keep warm.
  • In the same pan, scramble the beaten eggs until just set, then remove and set aside.
  • If needed, add more oil, then sauté diced carrots and minced garlic for 2-3 minutes. Add in the green peas and cook for an additional minute.
  • Increase the heat and add day-old rice to the pan, stirring constantly for about 3-4 minutes until heated through and crispy.
  • Return the chicken and scrambled eggs back to the skillet, pour in the soy sauce, and mix until well combined.
  • Pour the prepared bang bang sauce over the mixture, stirring until everything is coated and heated through.
  • Finish with a garnish of sliced green onions on top and serve hot.

Notes

Serve with a refreshing cucumber salad for a complete meal. Optional: Drizzle extra bang bang sauce on top for an extra kick.
