  • Whisk together granulated sugar, eggs, and vanilla extract in a large mixing bowl until smooth and creamy.
  • Stir in the undrained crushed pineapple.
  • Add the flour, baking soda, and salt to the wet mixture; mix gently until just combined.
  • Fold in shredded coconut and chopped nuts if you're using them.
  • Pour the batter into the prepared dish and bake for 35-40 minutes, or until golden brown and a toothpick comes out clean from the center.
  • Prepare the glaze while the cake is baking. In a saucepan, heat evaporated milk, butter, and brown sugar until it thickens slightly.
  • Poke holes across the surface of the warm cake and pour the hot glaze over it immediately.
