  • 2 cups Fresh Peas or thawed frozen peas
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth or chicken broth
  • 2 tablespoons Olive Oil

For a Creamy Finish

  • 1 cup Heavy Cream or coconut cream for dairy-free
  • 1 tablespoon Fresh Mint or substitute with basil or parsley

Instructions
 

How to Make Spring Pea Soup

  • Heat olive oil in a pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  • Toss in the minced garlic, stirring for about 1 minute until fragrant.
  • Stir in the fresh peas and vegetable broth. Allow the mixture to simmer for about 10 minutes, until the peas are tender.
  • Use an immersion blender to puree the soup until smooth. Add the heavy cream and fresh mint, blending briefly to incorporate.
  • Taste the soup and season with salt and pepper. Adjust consistency with additional broth if necessary.
  • Ladle the soup into bowls and serve hot, garnishing with extra mint or sautéed peas.

Notes

Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat gently and adjust consistency as needed.
