  • Peel and cut the parsnips into 1-inch chunks.
  • In a large bowl, combine parsnip chunks with olive oil, honey, fresh thyme, salt, and black pepper. Toss until evenly coated.
  • Spread the seasoned parsnips in a single layer on a parchment-lined baking sheet.
  • Bake for about 25-30 minutes, flipping halfway through until golden brown and tender.
  • Drizzle any leftover honey mixture from the pan over the parsnips before serving.
