  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs and melted butter until it resembles wet sand. Press this mixture firmly into the bottom of lined mini muffin tins to form a sturdy crust.
  • In another bowl, beat the cream cheese until it’s smooth and creamy. Gradually incorporate pumpkin puree, sugar, eggs, pumpkin pie spice, and vanilla until everything is well blended and airy.
  • Spoon the filling into the prepared crusts, filling them about three-quarters full. Bake for approximately 20 minutes, until the centers look slightly jiggly but set.
  • Once baked, let them cool to room temperature. Then, refrigerate the bites for at least two hours.
  • Just before serving, garnish with a dollop of whipped cream or a sprinkle of cinnamon.

Notes

Optional: Drizzle with caramel sauce for an indulgent twist. Allow cream cheese to soften for easier mixing.
