Ingredients
  

For the Beef

  • 3 pounds Boneless Beef Chuck Roast Brisket or round roast can also be used as a substitution.
  • 1 teaspoon Dried Oregano Reduce to ½ teaspoon for a milder taste.
  • 1 teaspoon Dried Rosemary Thyme can be used for a different profile.
  • 1 teaspoon Seasoned Salt Regular salt can substitute if needed—adjust to taste.
  • 1 teaspoon Black Pepper Adjust according to your preferred spice level.

For the Broth

  • 4 cups Beef Broth Low-sodium broth is an option for less salt.
  • 1 leaf Bay Leaf Remove before serving.
  • 1 clove Garlic Clove Can be skipped or replaced with garlic powder if preferred.

For the Sandwich

  • 1 loaf French Bread (sliced lengthwise) Any crusty roll or baguette can be used as a substitute.
  • 8 ounces Optional Provolone or Swiss Cheese Mozzarella or cheddar can be great alternatives.

Instructions
 

Preparation

  • Place the boneless beef chuck roast on a trivet inside your 6-quart Instant Pot.
  • Sprinkle the roast with dried oregano, dried rosemary, seasoned salt, and black pepper.
  • Pour in the beef broth, ensuring the meat is submerged, and toss in the bay leaf and peeled garlic clove.
  • Lock the lid, seal the pressure-release valve, and set the Instant Pot to pressure cook on high for 1 hour and 15 minutes.
  • After the cooking time is up, allow the pot to naturally release pressure for 10 minutes, then carefully quick-release any remaining pressure.
  • Remove the beef from the pot and shred the meat until it’s nicely pulled apart.
  • Discard the bay leaf and garlic from the cooking juices. Serve the shredded beef on sliced French bread, adding cheese if desired.

Notes

Consider adding sautéed onions or peppers for extra flavor and texture. Store any leftovers in airtight containers, separating the beef and au jus to preserve freshness.
