How to Make Honey BBQ Chicken Rice

  • Begin by heating a large skillet or deep pan over medium heat. This ensures that your chicken will sear beautifully and stay juicy.
  • Generously season your boneless chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Add a splash of oil to the pan, then sear the chicken for 3–4 minutes on each side, until it's golden brown and deliciously fragrant. Remove from the pan and set aside.
  • In the same pan, add uncooked long-grain rice. Toast it for 1–2 minutes, stirring frequently until it starts to become slightly translucent.
  • Pour in chicken broth, then add the BBQ sauce and honey. Stir well to combine.
  • Place the seared chicken back into the pan, nestled into the rice and sauce mixture for even cooking.
  • Bring everything to a gentle boil. Then, reduce the heat to low, cover, and let it simmer for 15 minutes.
  • After 15 minutes, sprinkle the mixed vegetables on top, cover, and continue cooking for an additional 5 minutes until the rice is tender and the chicken reaches 165°F (74°C).
