Equipment

  • large pot
  • Large skillet
  • cutting board
  • knife

Ingredients

For the Chicken

  • 1 pound chicken breast substitute with turkey or tofu if desired

For the Pasta

  • 8 ounces linguine can swap for penne or gluten-free pasta

For the Sauce

  • 4 tablespoons unsalted butter use unsalted for better control over seasoning
  • 1 cup heavy cream substitute with half-and-half or non-dairy cream for lighter version
  • 3 cloves garlic best to use fresh garlic
  • 1 teaspoon red pepper flakes optional; fresh jalapeños can be used for extra heat

For the Garnish

  • 2 tablespoons fresh parsley can swap with basil or cilantro

Instructions

Preparation Steps

  • Start by dicing the chicken into bite-sized pieces and mincing the garlic.
  • In a large pot, bring salted water to a boil. Add the linguine and cook until tender yet firm to the bite (about 8-10 minutes). Remember to save a cup of pasta water before draining.
  • In a large skillet, melt half of the butter over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, roughly 6-8 minutes.
  • Toss in the minced garlic and red pepper flakes into the skillet with chicken. Sauté everything together for about 1 minute, or until the garlic becomes fragrant and golden.
  • Lower the heat to medium, add the remaining butter and heavy cream to the skillet. Stir constantly for about 2-3 minutes until the mixture is smooth and creamy.
  • Gently toss in the cooked linguine to the skillet with the sauce, using the reserved pasta water as needed to achieve your desired sauce consistency. Finish by garnishing with finely chopped parsley.

Notes

Consider adding sautéed vegetables like spinach or bell peppers for a flavorful boost. Store leftovers in an airtight container for up to 3 days. Freeze for up to 2 months.
