Instructions

Cooking Instructions

  • Preheat your oven to 325°F (163°C). Spray a 12-cup muffin tin generously with cooking oil to ensure the egg bites release easily after baking.
  • Whisk together the eggs in a large bowl until frothy. Stir in the salt, black pepper, and garlic powder, creating a well-seasoned base for your mixture.
  • Fold in the cottage cheese, Colby Jack cheese, and bacon bits gently. Mix until all ingredients are evenly combined for a deliciously creamy and flavorful batter.
  • Divide the mixture among the muffin cups, filling each cup about 3/4 full to allow for expansion while baking.
  • Prepare a water bath by placing a pan filled with hot water on the lower rack of the oven. Bake the muffin tin above for 23-25 minutes, or until the edges are set and the centers have a slight jiggle.
  • Cool for a few minutes before carefully unmolding. Use a thin knife to help release the egg bites without breaking them.

Notes

Blend cottage cheese for smoothness. Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
