Ingredients
  

For the Sandwich

  • 2 pieces Boneless Skinless Chicken Breasts
  • 1 medium Avocado can swap for hummus for a vegan alternative
  • 1 cup Cheese (Swiss, Cheddar, Provolone) mix and match for your favorite taste
  • 4 slices Bread whole grain is a good choice

For the Condiments

  • 2 tablespoons Mayonnaise light version optional
  • 1 tablespoon Dijon Mustard

For the Crunch

  • 1 small Red Onion optional
  • 1 medium Tomato use ripe, juicy tomatoes

For Cooking

  • 2 tablespoons Olive Oil or use butter for grilling

Preparation

  • Begin by generously seasoning the boneless skinless chicken breasts with salt and pepper.
  • Heat a skillet over medium-high heat with olive oil. Cook the chicken for 6-7 minutes on each side until fully cooked.
  • While the chicken rests, slice the avocado, cheese, tomato, and onion.
  • On slices of bread, spread a layer of mayonnaise and Dijon mustard. Layer with the cooked chicken, avocado, cheese, onion, and tomato, and top with remaining bread.
  • Heat a clean skillet or grill pan with butter or oil. Grill the sandwiches for 3-4 minutes on each side until golden brown and cheese is melted.
  • Allow the sandwiches to cool slightly, then slice and serve warm.

Notes

Consider serving with sweet potato fries for a delightful crunch.
