Ingredients
  

For the Salmon Bites

  • 1 pound Fresh skinless salmon Cut into bite-sized cubes
  • 1 teaspoon Garlic Powder Fresh minced garlic can also be used
  • 1 teaspoon Smoked Paprika Regular paprika can be used for less smoke
  • to taste Salt Adjust quantities to taste
  • to taste Black Pepper Adjust quantities to taste
  • 1 cup Panko Breadcrumbs Gluten-free breadcrumbs can be used
  • 2 tablespoons Olive Oil Use any cooking oil with a high smoke point

For the Bang Bang Sauce

  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 1/4 cup Sweet Chili Sauce Can substitute with honey or agave syrup mixed with sriracha
  • 1 tablespoon Sriracha Adjust according to spice tolerance
  • 1 tablespoon Honey Optional; can omit if preferred
  • 1 tablespoon Lime Juice Fresh lemon juice can be used

For the Bowls

  • 2 cups Jasmine Rice Or Cauliflower Rice; can use quinoa or brown rice
  • 1 cup Shredded Purple Cabbage Green cabbage or any crunchy vegetable works
  • 1 medium Avocado Optional; can replace with sliced cucumber
  • 1 cup Shredded Carrots Any other mixed vegetables can be used
  • 2 tablespoons Green Onions Can replace with chives or omit
  • to taste Fresh Cilantro Omit if not liked
  • to taste Sesame Seeds Omit if not liked

Instructions

  • Preheat your oven to 400°F (200°C) or your air fryer to 390°F (200°C).
  • In a bowl, toss the salmon cubes with garlic powder, smoked paprika, salt, and pepper until they're evenly coated.
  • Roll each salmon piece in panko breadcrumbs and lightly spray them with olive oil.
  • Bake the salmon for approximately 12 minutes or until golden brown and cooked thoroughly.
  • In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey until smooth.
  • Place a generous base of jasmine rice in bowls and top with shredded cabbage, avocado, shredded carrots, and salmon bites. Drizzle with Bang Bang sauce, garnishing with green onions, cilantro, and sesame seeds.

Notes

For added flavor, serve with lime wedges on the side. Assemble the bowls just before serving for the best experience.
