  • 2 medium Potatoes Diced for faster cooking.
  • 1 cup Corn Kernels
  • 1 cup Green Beans Chopped for easy mixing.

For the Sauce

  • 10.5 oz Cream of Mushroom Soup Use beef stock for a different flavor or skip for a lighter dish.
  • 1 tsp Dried Thyme
  • 1 tsp Dried Parsley

For the Topping

  • 2 cups Shredded Cheddar Cheese

How to Make Amish Harvest Casserole

  • In a skillet, brown the ground beef over medium heat, draining any excess fat once cooked. Add the chopped onion and minced garlic; sauté until softened and fragrant, about 3-5 minutes.
  • Transfer the beef mixture into a slow cooker. Gently layer in the sliced carrots, diced potatoes, corn kernels, and chopped green beans. Stir in the cream of mushroom soup, thyme, and parsley until everything is well combined.
  • Cover your slow cooker and set it to low. Allow it to cook for 6-8 hours, or until the vegetables are tender and the flavors meld beautifully.
  • In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese over the top. Cover and let melt, then allow the casserole to sit for about 10 minutes before serving.
