How to Make Delicious Salsa Verde Chicken Casserole

  • Preheat your oven to 375°F (190°C). Grease a 9x12-inch casserole dish.
  • Heat olive oil in a skillet over medium heat. Add chopped onion and a pinch of salt, cooking until softened, about 5 minutes.
  • Stir in minced garlic, chili powder, and cumin. Cook for about a minute to bloom the spices.
  • Gently fold in the shredded cooked chicken, mix well, and remove from heat.
  • In a separate bowl, combine salsa verde and sour cream until smooth.
  • Spread ¾ cup salsa verde mixture in the bottom of the greased casserole dish. Layer in 8 tortilla halves, half the chicken mix, 1 cup salsa verde, and ½ cup Monterey Jack cheese.
  • Repeat another layer with 8 tortilla halves, remaining chicken mix, 1 cup salsa verde, and ½ cup cheese.
  • Top with remaining tortilla halves, rest of the salsa verde, and final ½ cup cheese.
  • Bake for 15-20 minutes until cheese is melted and bubbly. Cool for 10-15 minutes before serving.

Notes

For added flavor, drizzle with fresh cilantro just before serving. Best to cool before serving for cleaner slices.
