Ingredients
  

For the Raspberry Sauce

  • 2 cups Raspberries Fresh or thawed frozen
  • 1 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract Pure for best flavor

For the Cheesecake Layer

  • 8 oz Cream Cheese At room temperature
  • 1/2 cup Granulated Sugar
  • 2 large Large Eggs Room temperature
  • 1 teaspoon Vanilla Extract Pure for best results

For the Brownie Batter

  • 1 cup All-Purpose Flour Gluten-free blend for gluten-free version
  • 1/2 cup Dutch-Process Cocoa Powder Sift before using
  • 1/4 teaspoon Salt
  • 1/2 cup Refined Coconut Oil Can replace with another neutral oil

Directions

  • Make Raspberry Sauce: In a saucepan, combine raspberries, sugar, and vanilla. Simmer on medium heat for 5–8 minutes until thickened. Strain to remove seeds.
  • Prepare Cheesecake Layer: Beat cream cheese and sugar until smooth. Mix in an egg and vanilla until just combined.
  • Make Brownie Batter: Whisk flour, cocoa, and salt in one bowl. In another, mix coconut oil, sugar, and vanilla, then add eggs one at a time. Fold dry ingredients into wet.
  • Layer and Bake: Spread half of brownie batter in a parchment-lined pan. Pour cheesecake mixture over this layer, then dollop the raspberry sauce on top and swirl. Bake at 350°F for 30–35 minutes.
  • Cool and Chill: Let brownies cool for 10 minutes, then refrigerate for at least 2 hours before cutting.

Notes

Drizzle extra raspberry sauce on top for a sweeter finish.
