  • 1 cup Panko Breadcrumbs Using seasoned panko can add extra flavor.
  • 2 large Eggs Adjust quantity based on chicken amount.
  • 1 cup All-Purpose Flour

For the Curry Sauce

  • 1 packet Curry Sauce Mix Choose desired heat level.
  • 1 medium Onion Fresh or yellow onions work best.
  • 2 cloves Garlic Cloves Minced for depth and aroma.
  • 2 cups Vegetable Broth Low-sodium recommended for flavor control.

Optional Add-ins

  • 1 cup Seasonal Vegetables Carrots, peas, or bell peppers.
  • 2 tablespoons Green Onions For garnish.

Preparation

  • Flatten the boneless, skinless chicken breasts between plastic wrap until they’re about half an inch thick.
  • Set up your breading station with flour, beaten eggs, and panko breadcrumbs. Dredge each chicken breast in flour, then egg, then coat with panko.
  • Heat oil in a skillet over medium heat and fry the breaded chicken for around 5 minutes on each side until golden brown.
  • Sauté chopped onions and minced garlic in another pan over medium heat until soft. Stir in vegetable broth and curry sauce mix, simmering until thickened.
  • Slice the crispy chicken and serve over rice, drizzling the curry sauce generously on top.
  • Garnish with sliced green onions before serving.
