For the Dressing

  • 1/2 cup Mayonnaise Acts as the creamy base; Greek yogurt can lighten it up.
  • 1 tablespoon Worcestershire Sauce Enhances overall flavor; coconut aminos can be used as a gluten-free alternative.
  • 1/4 cup Sugar-Free Ketchup Provides the perfect touch of sweetness.
  • 1 tablespoon Swerve Confectioner's Sugar Use to taste as a low-carb sweetening option.
  • 1 teaspoon Horseradish Sauce Adds a kick, adjust or omit if desired.
  • 1 teaspoon Paprika Brings flavor and color to the dressing.

Directions

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper and arrange small mounds of shredded Swiss cheese into 8 circles.
  • Bake the cheese circles for 6-8 minutes until the edges are golden brown.
  • Whisk together mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish, and paprika in a bowl until smooth and well-combined.
  • Once the cheese is crispy, layer corned beef, sauerkraut, and the dressing onto each cheese circle.
  • Gently fold the cheese over the filling to encapsulate the ingredients.
  • Allow the roll-ups to cool for a few minutes then serve immediately.

Notes

Optional: Serve with extra horseradish sauce for an extra kick. Can prepare in advance, bake just before serving for fresh crispiness.
