Instructions

  • Combine in a large bowl the potato wedges, olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and pepper. Toss well.
  • Transfer the seasoned potatoes to a baking sheet lined with parchment paper.
  • Roast the potatoes for 45-50 minutes, turning them halfway through.
  • Remove from the oven and let cool slightly.
  • Garnish with chopped fresh parsley before serving.

Notes

For extra zing, drizzle a little lemon juice before serving. Best enjoyed fresh from the oven.
