  • 4 cups Fresh Spinach
  • 3 cups Chicken Broth Use low-sodium for better salt control
  • 1 cup Heavy Cream Can substitute with half-and-half
  • 1 cup Grated Parmesan Cheese Freshly grated is ideal
  • 4 cloves Garlic Can substitute with 1/4 teaspoon garlic powder
  • 1 tablespoon Italian Seasoning
  • 1/2 teaspoon Red Pepper Flakes Optional
  • Salt and Pepper To taste

For the Pasta

  • 1 lb Pasta (Penne or Rotini) Adjust cooking time based on pasta shape

For Garnish

  • 1/4 cup Fresh Basil Optional

How to Make Creamy Crock Pot Tuscan Chicken Pasta

  • Season the boneless, skinless chicken breasts with salt and pepper and place them in the crock pot.
  • Layer the sun-dried tomatoes, minced garlic, chicken broth, Italian seasoning, and red pepper flakes on top of the chicken.
  • Cover the crock pot and set to cook on low for 4–6 hours or high for 2–3 hours.
  • Remove the cooked chicken and shred it with two forks. Return shredded chicken to the pot.
  • Stir in the heavy cream, grated Parmesan cheese, and fresh spinach until combined.
  • Cook pasta according to package instructions, then drain and set aside with a splash of olive oil.
  • Add the cooked pasta to the crock pot and toss everything together to coat with the sauce.
  • Serve hot, garnished with fresh basil.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 2 months and reheat carefully.
