Ingredients
  

For the Gelatin Base

  • 4 boxes Pineapple-Flavored Gelatin Can use any similar fruit-flavored gelatin
  • 2 cups Boiling Water
  • ½ cup Cold Water

For the Creamy Layer

  • 2 cans Coconut Milk Regular milk can be used as a substitute

For Sweetness and Texture

  • 2 cups Mini Marshmallows Optional to reduce or omit
  • 1 can Mandarin Orange Segments Ensure they are drained and halved
  • ½ cup Maraschino Cherries Reserve one whole cherry for garnish

Instructions
 

Procedure

  • Dissolve the gelatin in a large mixing bowl with boiling water until no powder remains.
  • Add cold water and coconut milk to the gelatin, mixing until creamy. Chill uncovered for about 1 hour until thickened.
  • Lightly spray a fancy mold with cooking spray to prevent sticking.
  • Whisk the chilled gelatin mixture and gently fold in marshmallows, orange segments, and cherries. Pour into the prepared mold.
  • Place the mold in the refrigerator and chill for at least 4 hours, or until fully set.
  • To serve, run a knife around the edges of the mold, invert onto a serving plate, and garnish with the reserved cherry.

Notes

Garnish with fresh mint leaves or a sprinkle of shredded coconut for extra flair. Prepare a day in advance for a stress-free option.
