How to Make Irresistible Strawberry Pop Tart Sugar Cookies

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Whisk together the all-purpose flour, baking powder, and salt in a bowl. In another bowl, use an electric mixer to beat the softened unsalted butter and granulated sugar until light and fluffy. Add in the egg and both extracts, mixing until well combined.
  • Combine the wet and dry ingredients gradually, stirring gently until just combined.
  • Scoop the dough using a tablespoon and roll it into balls. Place them on your prepared baking sheet, creating a small indentation in the center of each ball with your thumb, then fill it with strawberry jam.
  • Cover each filled jam center with a flattened disc of dough.
  • Bake the cookies for 10-12 minutes, or until the edges are golden brown.
  • Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Mix the powdered sugar, milk, and vanilla extract in a bowl until smooth for the glaze.

Notes
