Ingredients
  

For the Cookie Dough

  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon baking powder Check freshness.

  • 1 cup unsalted butter Can substitute with vegan butter.
  • 1 cup granulated sugar Brown sugar can be used.

  • 1 teaspoon almond extract Optional, omit if avoiding nuts.
  • 1/2 cup strawberry jam Can substitute with any fruit jam.

For the Glaze

  • 1 cup powdered sugar Base for the glaze.
  • 2-4 tablespoons milk Use plant-based for dairy-free.
  • 1 teaspoon vanilla extract Infuses glaze with flavor.
  • 1 cup sprinkles Optional, adds color.

Directions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  • In a large bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy, about 2–3 minutes.
  • Add in the large egg, vanilla extract, and optional almond extract, mixing until creamy.
  • Gradually add your dry mixture to the wet ingredients, combining just until mixed.
  • Scoop out the dough and roll into balls, placing them on the prepared baking sheet. Create an indentation in each ball, filling it with strawberry jam before sealing.
  • Bake for 10–12 minutes, until the edges are just lightly golden, then let cool on the baking sheet for 5 minutes.
  • In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Once cooled, drizzle the glaze over each cookie and immediately sprinkle with colorful sprinkles.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Refrigerate for up to a week or freeze the dough for up to 3 months.
