Ingredients

  • 2 lbs baby potatoes Yukon Gold or red potatoes work beautifully.

For the Balsamic Vinaigrette

  • 1 tbsp honey Opt for maple syrup as a vegan substitute.
  • 1 clove garlic Garlic powder can be a gentler option.

Instructions
 

Preparation

  • In a large pot, cover baby potatoes with cold water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes until fork-tender. Drain and cool slightly before cutting into halves or quarters.
  • Whisk together balsamic vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper in a bowl or jar until well combined.
  • In a large bowl, mix warm potatoes, cherry tomatoes, red onion, basil, and parsley. Pour the vinaigrette over and toss gently to coat. Adjust seasoning with additional salt and pepper.
  • Serve warm or chill for 30 minutes to meld flavors, garnished with extra herbs or a drizzle of balsamic reduction if desired.
