Ingredients
  

For the Meatloaf

  • 2 pounds Ground Chicken Can swap with ground turkey.
  • 4 cloves Fresh Garlic Minced; fresh is preferred.
  • 1 cup Grated Parmesan Cheese Half for mixing, half for topping.
  • 1 cup Breadcrumbs Plain or Italian-seasoned.
  • 2 large Eggs Flax eggs can be used as a vegan alternative.
  • 1 cup Diced Onion Shallots can be a milder alternative.
  • 2 tablespoons Soy Sauce Tamari can be used for gluten-free.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjust to taste.

For the Topping

  • 1/2 cup Grated Parmesan Cheese Sprinkle on top.

Steps

  • Preheat Oven: Set your oven to 375°F (190°C) and grease a baking dish.
  • Sauté Onions: In a skillet, add diced onions and sauté for about 5 minutes until soft.
  • Mix Ingredients: In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently.
  • Shape Meatloaf: Transfer the mixture into the baking dish and shape it into a loaf.
  • Top the Loaf: Sprinkle the remaining Parmesan cheese over the top.
  • Bake: Place in the oven and bake for 45-50 minutes until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.

Notes

This meatloaf can be served with creamy mashed potatoes or a refreshing salad. Leftovers can be used in sandwiches or salads.
