Cooking Instructions

  • Pat the salmon fillets dry and season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Place salmon skin-side down in the hot skillet and cook for 4-5 minutes until crispy.
  • Flip the salmon and cook for an additional 3-4 minutes until cooked through.
  • Remove salmon from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  • Pour in the heavy cream, stirring, and bring to a gentle simmer.
  • Whisk in the grated Parmesan cheese until melted and smooth.
  • Stir in sun-dried tomatoes, spinach, and Italian seasoning, cooking until spinach wilts.
  • Return the salmon to the skillet, spooning the sauce over it for 1-2 minutes.
  • Garnish with chopped parsley before serving.
