Ingredients
  

For the Squash

  • 1 medium Spaghetti Squash Look for heavy, pale yellow squash without soft spots; zucchini can be a substitute.

For the Chicken

  • 2 pieces Boneless Skinless Chicken Breasts Can use turkey breast for a leaner option.
  • 1 teaspoon Kosher Salt Feel free to use regular salt, adjusting as needed.
  • 2 tablespoons Vegetable Oil Olive oil or avocado oil can be used.

For the Sauce

  • 2 tablespoons Unsalted Butter Kerrygold butter is a favorite for creaminess.
  • 3 cloves Garlic Cloves Fresh minced garlic is recommended.
  • 1 teaspoon Italian Seasoning Homemade dried herb blends can be used.
  • 1 cup Chicken Broth Vegetable broth can be a vegetarian option.
  • 1 cup Heavy Cream Substitute half-and-half for a lighter option.
  • 1/2 cup Parmesan Cheese Freshly grated for best flavor.

For Added Flavor

  • 1/2 cup Sun-Dried Tomatoes Can substitute with roasted red peppers.
  • 1 cup Chopped Fresh Spinach Kale can be used as a substitute.

Instructions
 

  • Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper to prevent sticking.
  • Halve the spaghetti squash lengthwise, placing the cut-side down on the baking sheet. Roast it for 30-40 minutes, or until fork-tender.
  • Season the boneless, skinless chicken breasts with kosher salt and pepper. Sear them in a pan with unsalted butter and vegetable oil until golden brown.
  • Remove the chicken from the pan and tent it with foil to keep warm while you create the sauce.
  • In the same pan, add the remaining oil and minced garlic; cook for about 1 minute until fragrant.
  • Stir in the heavy cream, chicken broth, Italian seasoning, and freshly grated Parmesan cheese. Allow to simmer until the cheese melts and the sauce thickens slightly.
  • Add the chopped fresh spinach and sun-dried tomatoes to the sauce, stirring until the spinach wilts and everything combines beautifully.
  • Mix in the roasted spaghetti squash until well-coated. Slice the chicken and mix it into the dish or serve it on top.
  • Garnish with extra Parmesan or a sprinkle of fresh herbs if desired.
