Ingredients
  

For the Sweet Potatoes

  • 4 medium Sweet Potatoes peeled and sliced into ¾ inch rounds
  • 2 tablespoons Vegetable Oil

For the Maple Glaze

  • 1 cup Maple Syrup honey can be used as an alternative
  • ¼ cup Water
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons Cornstarch

For Seasoning

  • 1 teaspoon Salt
  • ½ teaspoon Pepper

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine sliced sweet potatoes with vegetable oil, salt, and pepper. Toss until evenly coated.
  • Spread sweet potatoes in a single layer on a baking sheet. Roast for about 20-25 minutes, flipping halfway through.

Maple Glaze

  • In a saucepan, combine maple syrup, water, butter, and cornstarch. Whisk over medium heat until thick and shiny.

Assembly and Final Bake

  • Layer roasted sweet potatoes in a baking dish with browned sides facing up. Pour the maple glaze over them.
  • Bake the glazed sweet potatoes for 15-20 minutes or until the glaze is bubbly and sticky.
  • Let sit for about 10 minutes before serving.

Notes

For added crunch, sprinkle with chopped pecans before serving. Serve alongside roasted dishes or salads for a balanced meal.
