For the Cream Filling

Steps

  • Whip together heavy cream with powdered sugar and vanilla extract until soft peaks form.
  • In a saucepan over medium heat, combine granulated sugar, light corn syrup, and water. Stir until dissolved, then let simmer undisturbed for 8-10 minutes, until it reaches a deep amber color.
  • Carefully add warmed heavy cream to your hot caramel. Add in unsalted butter and salt, stirring continuously until smooth.
  • Pour in a thin layer of the caramel to a parchment-lined square pan and allow it to set for 5-7 minutes.
  • Dollop the chilled vanilla cream over the partially set caramel, ensuring it's evenly spread.
  • Pour the remaining caramel over the cream and smooth the top. Let it cool at room temperature or refrigerate to set.
  • Once set, lift the treats from the pan and cut them into squares. Optionally sprinkle with sea salt or dip in melted chocolate.

Notes

Store treats in an airtight container for up to 3 days at room temperature, or refrigerate to keep for longer.
