For the Broth

  • 1 can Coconut Milk Light coconut milk can be used for a lighter option.
  • 2 stalks Lemongrass Minced
  • 2 slices Galangal Fresh ginger can work if galangal isn’t available.
  • 3 leaves Kaffir Lime Leaves Torn
  • 2 units Thai Chilies Adjust quantity based on your heat preference.

For the Mussels

  • 2 pounds Fresh Mussels Ensure they are tightly closed and fresh.

For the Aromatics

  • 1 cup Thai Basil Shredded
  • 2 tablespoons Lime Juice Fresh is best, but bottled can be used.

Preparation Steps

  • Rinse the mussels under cold water, scrubbing the shells gently to remove any grit. Discard any mussels that are open or damaged.
  • In a large pot, combine coconut milk, minced lemongrass, sliced galangal, torn kaffir lime leaves, and chopped Thai chilies over medium heat. Stir well and bring to a gentle simmer.
  • Carefully add the cleaned mussels to the pot. Cover and steam for about 5-7 minutes until the mussels open.
  • Remove from heat, stir in fresh lime juice and shredded Thai basil. Serve hot in bowls with the fragrant broth.

Notes

Optional: Garnish with additional basil leaves or lime wedges for extra flavor. Leftovers can be stored in the fridge for up to 2 days, but best enjoyed fresh.
