How to Make Creamy Parmesan Italian Sausage Soup

  • Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart with a spoon and cooking until browned and fully cooked, about 5-7 minutes. Drain any excess fat if needed.
  • Stir in the chopped onions and minced garlic, sautéing for 2-3 minutes until the onions turn translucent. Then, add the diced carrots and celery, cooking for another 3-4 minutes until the vegetables soften slightly.
  • Pour in the chicken broth along with the diced tomatoes and their juices. Season with dried Italian seasoning, salt, and pepper. Bring everything to a gentle boil.
  • Once boiling, reduce the heat and let the soup simmer for about 10 minutes to meld flavors.
  • Slowly stir in the heavy cream and then add the grated Parmesan cheese, stirring until it melts and creates a creamy texture throughout the soup.
  • Mix in the fresh spinach or kale, allowing it to wilt for approximately 2 minutes.
  • Taste and adjust seasoning if necessary. Serve hot, garnished with extra Parmesan and fresh parsley if desired.
