Ingredients
  

For the Chicken Marinade

  • 1 lb Chicken Thighs skinless, boneless chicken breasts can be used for a leaner option
  • 1 tsp Salt adjust to taste
  • 1 tsp Garlic Powder or substitute with fresh minced garlic
  • 1 tsp Sweet Paprika or substitute with smoked paprika
  • 1 tbsp Curry Powder or adjust for preferred spice level
  • 1/2 cup Greek Yogurt or omit for a dairy-free option

For the Cooking

  • 2 tbsp Vegetable Oil use oils with high smoke points
  • 2 tbsp Butter or substitute with coconut oil for a dairy-free dish

For the Sauce

  • 4 cloves Garlic Cloves freshly minced
  • 1 medium Onion finely diced
  • 1 cup Tomato Sauce or substitute with diced tomatoes
  • 1 tbsp Sugar can be omitted or replaced with honey
  • 1/2 cup Heavy Cream or try coconut cream for a lighter option
  • 1/2 tsp Cayenne Pepper adjust for desired spice level
  • 1 tbsp Garam Masala or replace with a mix of cumin and coriander
  • 1/2 tsp Black Pepper opt for freshly cracked
  • 2 tbsp Chopped Parsley cilantro can be used as an alternative

For Serving

  • 4 pieces Naan Bread or swap rice for cauliflower rice for a low-carb option
  • 2 cups Steamed Rice

Instructions
 

Preparation

  • In a large mixing bowl, combine chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let it marinate for at least 15 minutes.
  • Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown, about 8-10 minutes.
  • In the same skillet, add butter and allow it to melt. Add freshly minced garlic and finely diced onion; sauté until the onion becomes translucent, about 3-4 minutes.
  • Pour in the tomato sauce and sprinkle in sugar. Let it simmer for 2-3 minutes, then gradually add the cooked chicken and pour in the heavy cream.
  • Stir until everything is beautifully blended. Stir in cayenne pepper, garam masala, and black pepper, then reduce heat and simmer for about 10 minutes.
  • Stir in the remaining butter, taste and adjust seasoning if needed.
  • Serve hot with warm naan and steamed rice.

Notes

Allow chicken to marinate for at least 15 minutes for optimal flavor. Store leftovers in an airtight container for up to 3 days.
