  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the softened unsalted butter, granulated sugar, and brown sugar together in a large bowl until light and fluffy.
  • Incorporate the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  • Mix together the all-purpose flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet ingredients.
  • Prepare the cheesecake filling by beating the cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  • Scoop a portion of cookie dough, flatten it in your palm, and place a teaspoon of cheesecake filling in the center.
  • Enclose the filling with the dough to form a ball and arrange them on the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
