  • 2 cups Green Salsa (Salsa Verde) Choose a thicker brand to prevent a watery casserole.
  • 8 pieces Corn Tortillas Lightly toast them to maintain crispness.
  • 3 cups Shredded Cooked Chicken Opt for rotisserie chicken for ease.

For the Flavor Enhancers

  • 1 cup Monterey Jack Cheese Grate fresh cheese for optimal melting.
  • 2 tablespoons Olive Oil Essential for sautéing vegetables.
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin

For the Creamy Layer

  • 1 cup Sour Cream Blends seamlessly with salsa verde.

  • Preheat your oven to 375°F (190°C) and grease a 9x12-inch casserole dish.
  • Sauté olive oil in a skillet over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  • Add minced garlic, chili powder, and cumin. Cook for another minute until fragrant.
  • Incorporate shredded cooked chicken into the skillet, ensuring everything is well mixed, then remove from heat.
  • Mix together salsa verde and sour cream in a bowl until smooth.
  • Layer the casserole by spreading ¾ cup of the salsa verde mixture at the bottom of the greased dish. Place 8 tortilla halves over the sauce and top with half of the chicken mixture, followed by 1 cup of salsa verde and ½ cup of cheese.
  • Repeat layering with another set of tortilla halves, the remaining chicken, another cup of salsa verde, and ½ cup of cheese.
  • Top with the remaining tortilla halves, salsa verde, and sprinkle the last bit of cheese on top.
  • Bake for 15-20 minutes until the cheese is melted and the sauce is bubbly.
  • Cool for 10-15 minutes before serving.

Notes

Optional: Garnish with fresh cilantro or a dollop of sour cream for added flavor.
