Ingredients
  

For the Pasta

  • 12 pieces Jumbo pasta shells Feel free to use gluten-free shells if needed.

For the Filling

  • 15 oz Ricotta cheese Cottage cheese is a lighter option if you prefer.
  • 3 cups Fresh spinach Cooked and chopped.
  • 1 cup Mozzarella cheese (shredded) Consider provolone for a twist.
  • 0.5 cup Parmesan cheese (grated) Use Pecorino Romano for more saltiness.
  • 1 tsp Garlic powder Fresh minced garlic can be substituted.
  • 1 tsp Salt
  • 1 tsp Pepper Opt for sea salt or freshly cracked pepper.

For the Sauce

  • 24 oz Marinara sauce Homemade sauce is a great option.
  • 1 cup Extra mozzarella cheese for topping Optional for more melty goodness.

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C).
  • Bring water to a boil in a large pot, add salt, and cook jumbo shells until al dente, about 10-12 minutes. Drain and cool.
  • In a mixing bowl, combine ricotta, chopped spinach, half of the mozzarella, Parmesan, garlic powder, salt, and pepper until creamy.
  • Gently fill each pasta shell with the ricotta mixture using a spoon.
  • Spread half of the marinara sauce in a baking dish, arrange stuffed shells on top, and pour remaining sauce over.
  • Sprinkle the remaining mozzarella cheese over the shells.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  • Allow to cool slightly before serving. Optionally garnish with fresh basil or parsley.

Notes

For added richness, drizzle with olive oil before serving.
