Ingredients
  

For the Chicken

  • 1 lb Boneless, skinless chicken breast Can substitute with chicken thighs for added juiciness.

For the Pasta

  • 8 oz Twisted pasta (fusilli) Alternatives include penne or rotini.

For the Sauce

  • 2 tbsp Unsalted butter Can use olive oil for a dairy-free option.
  • 4 cloves Fresh garlic, minced Substitute with garlic powder (1 tsp) if fresh is unavailable.
  • 1 cup Heavy cream Half-and-half can be used for a lighter version.
  • 1 cup Chicken broth Vegetable broth works for a lighter flavor.
  • 1 cup Grated Parmesan cheese Freshly grated is recommended for best results.
  • 1 tbsp Italian seasoning Use individual herbs like oregano if preferred.
  • 1/2 tsp Red pepper flakes Optional for heat; omit for a milder dish.
  • 1 tsp Fine salt Adjust to taste.
  • 1 tsp Black pepper Adjust to taste.

For Garnishing

  • 2 tbsp Fresh parsley, chopped Can swap with basil or omit entirely.

Preparation

  • Start by boiling salted water in a large pot. Cook the twisted pasta (fusilli) until al dente according to package instructions. Remember to reserve ½ cup of pasta water before draining.
  • Pat the boneless, skinless chicken breast dry with a paper towel, then season generously with salt, pepper, and half of the Italian seasoning. Sear in a skillet over medium heat with 1 tablespoon of unsalted butter until golden brown, about 3-4 minutes per side. Once cooked, remove the chicken from the skillet and set aside.
  • In the same skillet, melt the remaining butter. Sauté the minced fresh garlic and optional red pepper flakes until fragrant, about 30-60 seconds. Deglaze the pan with chicken broth, then stir in the heavy cream and the rest of the Italian seasoning. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  • Lower the heat and gradually stir in the grated Parmesan cheese until it melts smoothly into the sauce.
  • Return the cooked chicken to the skillet with its juices, then add the drained pasta. Toss everything together to coat the pasta and chicken with the creamy sauce, adjusting the consistency with the reserved pasta water if needed.
  • Take a moment to taste and adjust the seasoning with salt and black pepper. Garnish with chopped fresh parsley before serving, and enjoy your delightful meal!

Notes

For extra flavor, add a sprinkle of extra grated Parmesan before serving.
