  • Cook the Pasta: In a large pot, bring salted water to a boil and add your spaghetti or linguine. Cook until al dente, about 8-10 minutes, reserving some of that starchy cooking water before draining.
  • Prepare Sauce Base: While the pasta cooks, heat a skillet over medium heat. Add olive oil and minced garlic, sauté until fragrant and golden, about 1-2 minutes.
  • Sear the Scallops: Pat fresh scallops dry, season with salt and pepper, then place in the skillet. Cook for about 2-3 minutes on each side until golden brown.
  • Toss Everything Together: Add the drained pasta to the skillet with a splash of reserved pasta water and squeeze of fresh lemon juice. Toss gently.
  • Final Touches: Stir in chopped parsley, adjust seasoning if necessary, and serve hot with additional herbs on top.
