How to Make Boston Cream Pie Cookies

  • Cream Butter and Sugar: In a mixing bowl, beat the softened butter with sugar until light and fluffy, about 3-5 minutes.
  • Incorporate Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition, then pour in the vanilla extract.
  • Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt until well combined.
  • Combine Mixtures: Gradually add the dry ingredient mixture to the butter mixture and mix just until incorporated.
  • Scoop Dough: Drop rounded tablespoons of dough onto the prepared baking sheet, keeping them about 2 inches apart.
  • Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until edges are lightly golden.
